Coconut Bread

This is an amazingly delicious bread that is gluten-free and very easy to make. I add a dash of herb to the mix, maybe a bit of oregano, basil, dried garlic; maybe a Mrs. Dash blend, which makes for a lovely savoury flavour.


¾ cup sifted Organic Coconut Flour
½ cup Organic Virgin Coconut Oil or butter, melted
6 eggs
2 tablespoons honey
½ teaspoon salt
1 teaspoon baking powder

Blend together eggs, butter, honey and salt.

Combine coconut flour with baking powder and whisk thoroughly into batter until there are no lumps.

Pour into greased 9 x 5 x 3 inch or smaller loaf pan.

Bake at 175C (350F) for 40 minutes.

Remove from pan and cool on rack.
